Toss it all over some brown rice to add a nutritious grain to your plate.

Noodle salads are also very versatile and tasty! Going for cold soba noodles will help everyone cool down on a warm summer night and they are simple to make. The buckwheat noodles are full of clean protein that compliment peanut sauce and shredded veggies nicely.

When it comes to breakfast, prep a hearty meal that will keep everyone fueled for a day of hiking! Breakfast scrambles are fun for everyone – let the kids add in their favorite meats, cheeses, and veggies before tossing the pan of eggs over the campfire. Wrap everything up in a burrito for a healthy meal on the go!

If you know you’re going to be ravenous after adventuring until nightfall, a crockpot will be your best friend. Tostadas with shredded chicken can sit simmering all day in the RV, filling it with the fabulous aromas of spice. Toss in a liner before filling the crockpot and clean up will be as easy as wrapping it up and tossing it in the trash!

If you’re in the mood for pasta, nothing can beat a quick and nutrient-rich spaghetti tossed in a puttanesca that requires minimal cooking. Save time and save yourself from heating up standing over the stove by prepping some pasta at home ahead of time. Let it cool completely before storing it in an airtight container. Pre-made, low-sodium pasta sauce is enhanced by pitted olives to brighten up the flavors for a filling, simple dinner.
